Original Valentine's Day plan:  hiking at a national wildlife preserve...until the temperatures dropped and the cold rain set in.  Instead it was tex-mex, board games, and a relaxing evening of Everybody Loves Raymond.  Oh, and baking...a lot of baking.  

A friend's daughter was turning 21, so I made a surprise-inside cake.  First, I baked a halved vanilla cupcake recipe in a sheet pan and cut out lots of 2s and 1s...



After freezing them for a few hours, I stood them up inside a half-poured chocolate cake batter...


...and then spooned the rest of the batter on top.  Freezing the letters means that when the cake is baked, the letters/numbers will thaw instead of 'baking twice,' which would make them tough.  I don't have a photo of the inside of the cake, but each slice has a pink '21' inside!

I had a baby shower this weekend, and made a cake for that...


...and at the same time as the shower, Todd had a toy show on the north side.  I wanted to make plenty of treats for him and the friends that were helping out.  I made brownies...

Oh, I also made another batch of peanut butter cookies for the baby shower.  It was a very busy couple of days!  

The cold weather was perfect for cats on laps.



It got colder, and...snow!!




The feeders drew a lot of birds...especially blue jays.


So...many...blue jays.




Even though they're 'bully birds,' I like to see them.  Besides...our other birds seem to stand up to them just fine!



Nice bit of color in a dull month, too!

Todd's made one trek out to check the trail cams in this cold weather, but we caught something interesting.  It's coyote mating season.  Are these two playing?  Fighting?  Courting?  They seem to be having fun, whatever it is!

Maybe there'll be PUPPIES in the spring!

gorn adorn

 It's been a long two weeks but CHRISTMAS TREE UP!

Mantle was simple, tree boughs from our fir trees.

Bring on the ornaments!  Old favorites...


And we always add new ones each year.  This year, I bought a possum ornament for Todd, in honor of our nightly guest:


Todd topped me by finding this Star Trek Gorn ornament, which I love so much that I'm going to keep it out all year.  I've been reading a lot about/trying to defeat my own "lizard brain" so this is especially perfect.

The cats have shown some interest in the tree...


...but seem more interested in the displaced chair that we moved to accommodate the tree.

Most of the photos I've taken lately have been strictly cats...



...because I was sick for over a week and very slow to move past it.  I had a low-key birthday...I did make it out for a Christmas choir performance, and had a delicious brownie at home.


I don't believe in cutting corners on birthday treats, but this year's cake was no sugar...no flour...no oil...no butter...no egg...no dairy.  I'd made it the week before and it was so delicious, I wanted it again.

The World's Healthiest Brownie
(modified from Chocolate Covered Katie)

1 cup pumpkin puree
2/3 cup peanut butter
1/2 cup unsweetened cocoa powder
1 teaspoon vanilla
1/4 teaspoon salt
1/4 cup sugar substitute (I used Swerve)
1/4 cup chocolate chips (so, a little sugar...)

Mix it all together, bake it at 325 in a standard pie dish for 20 minutes, and put it in the refrigerator to firm it up.  Top it with some lightly sweetened cream cheese if you don't mind dairy and it's ready to go!  It's really rich and delicious.  

Birthday done, Christmas cards out, tree is up, and now we're focusing on our Christmas rush at work.  It's a lovely time of year and I'm hoping to rally within a few days to really get our massive Christmas week planned out properly.  I can't wait!

Frost and Frosting

I had a birthday about two weeks ago!  I will admit that I'm pretty childish about birthdays.  I don't want to go out for a fancy meal, and I don't want to have a party.  I want to be home in my pajamas all day long.  Todd has to be home, too...pajamas on.  I bake my own birthday treats.  Forget cake, which is too light and fluffy for a birthday.  I want something thick and rich, so I always bake birthday brownies (chocolate) with homemade vanilla buttercream, covered in sprinkles, served with peppermint chip ice cream.  Every single year.  The only difference comes when I mix the two together and have ice cream cake (same flavors). 


We always play board games for hours.


We're always surrounded by our beloved pets.


It's a pretty special time.  Todd is usually pretty good at gift-giving, and he found some really cool things this year.  First, he purchased some vintage nature books.


Then he tracked down the original painted artwork and had it framed for me.  The detail is amazing!


The first print, like the book, has a mustard-colored background...


...but the other, regrettably, is pretty close to neon green.


Because of the color, we aren't quite sure what to do with it.  Hopefully inspiration will strike!

We've had a recent warm spell, which brought days of beautiful fog.


It was so warm that my spring bulbs started popping up.


Thankfully, the temperatures did finally drop, and now we've got some lovely frost.


When you look closer, the ice crystals are so beautiful.


The heat has been on, and Tabitha has discovered that under the living room couch, a register blows out pretty pleasant air, creating a hot pocket that she spends most of her time in.


My Christmas cactus has bloomed.


It reminds me so much of my beloved cosmos.


I've been taking a lot of comfort where I can find it lately, because we've had a family tragedy.  Two days ago, my dad committed suicide by jumping from the top of a tall building in Japan, only a week away from the anniversary of my beloved grandpa's death.  My dad and I weren't close, but it's always sad to me, trite as it may sound, when someone who has turned their back on God dies without reconciliation.  I've had a string of tragedies and a great deal of loss in my life, starting from a very early age, and each one has tested and strengthened my faith.  I am grateful for my many blessings, and I am grateful that I don't have to worry about the reasons why bad things - sometimes very bad things - happen.  God never said the common phrase so often attributed to Him:  "God will never give you more than you can handle."  We frequently DO have more than we can handle, don't you think?  It's during these overwhelming times that I think of Psalm 23:4:  "Yea, though I walk through the valley of the shadow of death, I will fear no evil, for thou art with me."  The concept of God being with us is a theme throughout the Bible. 

Joshua 1:9:  "Be strong and courageous.  Do not be frightened, and do not be dismayed, for the Lord your God is with you wherever you go."

Matthew 28:20: "And behold, I am with you always, to the end of the age."

Hebrews 13:5:  "...be content with what you have, for He has said, "I will never leave you nor forsake you."

Romans 8:38 - 39:  "  For I am sure that neither death nor life, nor angels nor rulers, nor things present nor things to come, nor powers, nor height nor depth, nor anything else in all creation, will be able to separate us from the love of God in Christ Jesus our Lord." 

It's a pretty powerful message, and one that gives me great comfort and peace.
